BBQ side salad + alternative lunch option

Good food speaks to the heart and it’s a bonus when the delicious taste meets healthy dishes and allows you to guilt-freely indulge in seconds, and thirds. It’s considered icing on the cake, when those same delicacies are easy to whip up and a consistent crowd pleaser. Once summer begins to more frequently show its face BBQs are aplenty around our house. There’s just something about the smell and taste of a backyard barbecue that epitomises summer.

So when the sun shines and friends are gathered around, a great selection of meat paired with some fresh summer sides and a cooling sweet treat, is perfection. Today I’m sharing one of my favorites – it’s one of those ‘ah ha’ dishes, the kind that you wouldn’t ordinarily think of pairing together yet it’s ‘oh-so ‘moreish’ once you do. [a northern English word for absolutely delish!]

We bring you the fig, tomato, and sweet onion salad

Steps:
Combine the first two ingredients in a large bowl, stir well.
Add figs, lettuce, tomatoes, onion, and mint, then toss gently and sprinkle with cheese.

Serve:
I served mine in mason jars for a little southern flare but you do as you wish.

And just like that you have yourself  an easy, yet ultra delicious, dish that can also make for a healthy lunch alternative.
